Canard brings its French-inspired fare to Beaverton

Gabriel Rucker, one of Portland's most acclaimed chefs and restauranteurs, said opening an outpost of his neo-French bistro Canard in Beaverton was "a no brainer."

State of plate: Citing the suburb's dense and diverse population — as well as his own experience moving out of Portland — Rucker told Axios, "There are so many people who live outside of the city limits and are hungry for great non-chain restaurants to dine at."

This week, Rucker gave Beaverton residents another option. Canard's new dining room is on the same buzzy downtown block home to other prominent Portland establishments, like Dos Hermanos, Tito's Taquitos and Deadstock Coffee.

Best bites: The new restaurant still features many of Canard's classics: steam burgers, oysters, braised rabbit, steak frites and chicken liver mousse, as well as west-side exclusives like smoked s'more icebox cake.

The vibe: Canard Beaverton will be the largest among its restaurants (Rucker, co-owner Andy Fortgang and partner Taylor Daugherty opened an Oregon City spot in 2022). Centered around a spacious bar, the space will also feature a mezzanine, bookable for private events.

If you go: Canard Beaverton (12395 SW Broadway St.) is open daily from 4-9pm.

Lunch will launch soon, as well as weekend brunch.
