Ice Queen's Rebecca Smith shares her last meal

When it's freezing outside, not many people reach for frozen treats. That's why Rebecca Smith of vegan paleteria Ice Queen has been perfecting the soft-serve milkshakes and making the "thiccflurries" even thicker.

What she's saying: "I've been focused on finding creative ways to draw people into my shop because who needs foot traffic?" she told Axios.

🍹 We wanted to know: If Smith had one meal left in Portland, what would she eat?

She'd kick things off with the "An Lò" mocktail from Kann — a concoction of lime, ginger, yellow bell pepper and pineapple.

🥗 Appetizer: Smith eats the Caesar salad with fried vegan chicken from Thunderbird Bar at least once a week, and she wouldn't start her last meal any other way.

🥪 Entree: Next up, the "masa y papa" torta from Güero — a masa and potato pancake topped with avocado, pickled onion, cabbage and queso botanero — sans tomato.

🍨 Dessert: The final course of the night is a twofer. First up, the lemon basil gelato from Pinolo. "It's light, herby, and feels a little fancy, seems fitting for a grand finale," Smith told Axios.

Not one to pass up sweets from her own shop, though, Smith would end the night with a oatchata paleta, "because I'm loyal like that."
