An all-star lineup of local chefs will be showcasing dishes using salvaged and upcycled ingredients during the Summer Supper event at the Redd on Salmon this weekend, hosted by nonprofit Urban Gleaners.
The vibe: More than a dozen Portland-based food and beverage purveyors were tasked with "transforming what's often discarded into something extraordinary" to promote Urban Gleaner's mission to reduce food waste and hunger.
Roughly 90% of the food was gleaned — meaning saved from the landfill and redistributed — at last year's inaugural event.
Of the 1,100 pounds of gleaned food from the 2024 event, 123 pounds of leftovers were either donated back to free food markets or munched by on-site goats.
Best bites: This year, Hayward's Kari Shaughnessy will craft grilled meatballs with pickled cabbage and hot mustard, Richard Le of Matta plans to serve turmeric catfish and Akadi's Fatou Ouattara will have black eyed pea stew shooters, among other offerings.
