What República's Jose Camarena would eat for his last meal

• On Sunday, Camarena will join other local culinary heavyweights like Kann's Gregory Gourdet and Xiao Ye's Louis Lin at the Urban Gleaners Summer Supper event — turning food waste into masterpieces.

We wanted to know: If Camarena had one meal left, what would he eat?

• He told Axios that as much as he enjoys "creating extravagant, multi-course menus night after night," his last meal would be simple.

🌶️ Appetizer: Xiao Ye's mini masa madeleines with jalapeño butter. "I believe they serve 5 to an order so I'd likely get a couple orders for the beginning of my departure."

🍝 Entree: For the last seven years, Camarena has visited Luce at least once a month and can't imagine a last meal anywhere else. He'd order the pappardelle with rabbit sugo.

🍫 Dessert: Camarena's "major sweet tooth" would be satisfied by a warm chocolate brownie from wine-focused restaurant OK Omens.

🥃 Nightcap: He'd enjoy Expatriate's Transmission cocktail — a blend of rye whiskey, dry vermouth, banana liqueur and a dash of aromatic bitters — with a playlist composed of José José, Los Angeles Negros, Vicente Fernández and Natalia Lafourcade, "playing at an inappropriately loud volume."
