Ina Pinkney's Heavenly Hots pancakes rise again

Chicago's Breakfast Queen Ina Pinkney is sharing some hot tips on pancakes and Passover.

State of play: The restaurateur's lighter-than-air Heavenly Hots pancakes that disappeared when she retired in 2013 have risen again at Schmaltz Deli in Lisle.

  • To celebrate their resurrection, Pinkney will be working the room at the DuPage County restaurant from 9am to 1pm on May 5.
  • "I have so many of my old customers who live in the suburbs," she says. "I can't wait to see them."

Yes, but: Leavened breads like the heavenly hots will be verboten for many during Passover starting tonight.

  • So Pinkney shared another favorite recipe: matzo meal pancakes.

What she's saying: "This was my go-to when I would come home from the restaurant exhausted and hungry," she says. "It was the ultimate comfort food."

The recipe: Mix two eggs, ½ cup matzo meal and ½ cup very warm water. Heat oil in a pan and cook like regular pancakes, "but don't expect bubbles to form," she says.

  • "I like them sweet but you can make them savory with caramelized onions or whatever you like."
