Scoop: Koyoté will open a second restaurant in Park City

Zoom in: The Park City restaurant is planned to open in Kimball Junction in October, co-owner and chef Hiro Tagai tells Axios.

• The new restaurant will be smaller than the Salt Lake City one, but will eventually include an upstairs unit.
• "We're not really looking to stop," he says, adding that he also plans to open another location in Salt Lake County.

The big picture: In less than three years, Tagai and Felipe Oliveira, the restaurateurs behind Koyoté and Junah, have made a mark on Salt Lake City's evolving restaurant scene.

• Since making the Michelin list of Utah restaurants offering a great meal at a good price last week, the business has seen a 25% to 35% increase in customers, Taiga says.
• Junah, an Italian-Japanese fine dining restaurant that opened last year, was named a James Beard Awards semifinalist in January for best new restaurant.

Flashback: Tagai started in the food business working front-of-house positions at a local pizzeria and a Jimmy John's in Utah County.

• His first job as a chef was at Provo's Happy Sumo sushi restaurant.

What they're saying: Tagai attributes Koyoté's appeal to its authentic cuisine, Japanese ownership, affordable price point and "vibey" ambience.

• "It's one of the few Japanese-owned Japanese restaurants in town," he says.

Zoom out: Since Koyoté's debut, a number of successful ramen shops have opened across Salt Lake County, including UT Craft Ramen in Midvale and Mensho in the Post District.
