Urban Gleaners Summer Supper tackles food waste

Some of Portland's premier chefs will be putting scraps to work for Urban Gleaners' third annual Summer Supper this weekend.

Zoom in: More than a dozen local purveyors were tasked with "transforming what's often discarded into something extraordinary" to promote Urban Gleaners' mission to reduce food waste and hunger.

The nonprofit says it rescues nearly 1.2 million pounds of food annually and distributes it to more than 8,500 families across the region each week.

Best bites: At this year's fundraiser, Mika Parades from L'Echelle will serve ratatouille with whipped brie and The Malarkey's Lalo Camarena has carnitas with grilled grape & fennel salsa on tap.

Plus: Sugarpine Drive-In and Mizuba Tea Co. teamed up to create a hojicha banana pudding sundae.
Other participating restaurants include Javelina, Sammich, Bar Nouveau and Kachka.
