Bite Club: Beignets at Vancouver's Bleu Door Bakery

• And for years, Vancouver residents have been telling me to try the beignets at Bleu Door Bakery, which are only available on weekends and tend to sell out fast.

The menu: Breakfast at Bleu Door's express window is served all day (egg and sausage sandwiches, biscuits and gravy and more), with rotating pastries like danishes, croissants, cookies and scones to go.

• Its indoor cafe next door boasts a vast selection of French-inspired offerings like quiche du jour and a Monte Cristo sandwich — filled with ham, turkey and Swiss cheese, dipped in French toast batter and then fried.

The bite: Bleu Door's beignets come with lemon curd and a not-so-healthy amount of powdered sugar. I've never had beignets before, so I asked Chelsea Brasted from Axios New Orleans to describe what one should taste like.

💭 Chelsea's thought bubble: A perfect beignet is hot, pillowy and slightly sweet. And there is no such thing as serving them with too much powdered sugar.

The bottom line: It tasted exactly like that.
