Vaucresson's Cafe serves up creative sausage poboys

Vaucresson's got its start making hot sausage more than a century ago, but the new generation is spicing things up with creative poboys.
What I ordered: Jerk chicken sausage poboy ($14) with homemade mango mustard and pickled onions.
- The sausage has a nice snap when I bite into it, and the pickled onions add a tasty tang. It's a hearty, tropical lunch on a summer day.
Zoom out: It's the 125th anniversary for Vaucresson Sausage Co.
- The longtime 7th Ward location closed after Hurricane Katrina, co-owner Julie Frederick Vaucresson tells Axios.
- They reopened in a nearby spot in November 2022.
Zoom in: Vaucresson's is known for its crawfish sausage poboy at Jazz Fest and French Quarter Fest.
- The jerk chicken sausage, a relatively new creation, is also a bestseller, Vaucresson tells me.
Meanwhile, I'm still thinking about the warm side of cornbread.
- It was sweet and cake-like and served with a drizzle of honey. It goes well with the cafe's vegetable sides. Hilary Vaucresson, the owner's daughter, said customers now order it as a standalone item because it is just that good.

- Vaucresson, who playfully tells me she'll answer to the title of Creole Sausage Queen, has a cookbook coming out later this year called "Creole Made Easy."
- She also sells her line of mustards, sauces and meats in the cafe.
