Bite Club: Uyghur lagman at Kashgar in Albany Park

For years, I've been searching for lagman as delicious as the stuff I ate in Central Asia when I lived there in 1993-1994.

This week I found it at Kashgar Uyghur Dining in Albany Park, 4830 N. Pulaski Rd.

The bite: "Special lagman" ($16.99), tender but elastic hand-pulled noodles, paired wth a rich broth of beef, peppers, garlic, tomato, mushrooms and onions.

After adding some traditional white vinegar and chili paste, I was instantly transported back to Central Asia.

The pronunciation: Lahg-MAHN.

Thank you in Uyghur: Köp rehmat (sounds like: cope RAH-mott)

Also: Don't sleep on the tart and tomatoey Uyghur salad and flaky meat pies called samsas.
