Pan de La Selva brings pan dulce to Seattle City Hall

• The idea is "to bring a modern take on pan dulce and to mirror the way communities of color hold on to identities while adapting to new environments," the shop said on Instagram.

State of play: Pan de La Selva moved into its City Hall pop-up storefront in August and will be there through at least mid-December.

What to try: This week, we sampled two types of conchas: marigold vanilla and hibiscus plum, each of which was a pleasure to bite into.

• A pan de coco was pillowy soft with a caramel filling, while the semita — a tart of guava, apple and cream cheese — boasted a tender crust.
• I'll also be back for the honey quesadilla, a Salvadoran cheese pound cake topped with sesame seeds.
• The store serves drip coffee, cold brew and matcha lattes to accompany its sweets.

What's next: The shop says it plans to add more hot beverages to its menu as the weather continues to cool.
