New Cottonwood Heights restaurant serves up elevated Thai cuisine

Cottonwood Heights has welcomed the new Ve La Thai Fine Dining Restaurant & Wine that promises an elevated experience.
The intrigue: The restaurant, which opened in November, bills itself as Utah's "first Thai fine-dining restaurant," featuring dishes like lamb cutlet curry and creamy chili jam soft shell crab.
- For co-owner Chutpol Chanaroke, stand-out dishes include the sous vide beef massaman curry.
The big picture: Chanaroke said he opened the restaurant because he felt Thai cuisine in Utah was monotonous.
- "I [wanted] to open a restaurant that stands out and try to elevate Thai food, offering new flavors for people here, while still maintaining traditional Thai authenticity," he told Axios.
- The restaurateur also runs Krua Thai downtown and Yuma Ramen in Park City.
What I tried: I was delighted by the eatery's tangy salmon carpaccio ($12.95), fragrant, herb-infused shrimp tom yum ($19.95) and creamy Thai iced tea ($5).
The vibe: Patrons who visit will be welcomed by stacked wall-mounted wine racks, red velvet seating and curtains and jazz music.
- The restaurant feels like it's designed for a date night, but lunch specials are available.
What's next: The restaurant expects to get approval to sell alcohol in the next couple of months, Chanaroke noted.
