New West Valley City eatery is all about carnitas

• The Mexican restaurant (4669 W. 3500 South #2) that specializes in Michoacan-style carnitas offers multiple cuts of pork including: costilla, macisa, cuero, bushe, onion, igado, corazon and patas.

What I ordered: The carnitas plate ($12) accompanied by red rice, refried beans and a stack of handmade tortillas and an iced-cold horchata ($4) to wash it down.

The bottom line: Traditionalists will not be disappointed. The soft and tender pork was well worth the 15-minute wait.
