Hayward's Kari Shaughnessy shares her last meal

• Think dishes your grandma made, breakfast for dinner or summer camp-inspired meals all while exploring "the versatility of the products available in the Willamette Valley, even in the winter," she told Axios.

We wanted to know: If Shaughnessy had one meal left, what would she eat?

• It's surprisingly simple.

🥗 Appetizer: "A done-up, almost overdressed chicory caesar salad with slightly soft, torn bread croutons," she said. Torn bread is key so the dressing "can get up in the nooks and crannies."

🌶️ Entree: Kuay teow kua gai — the Chinese-inspired Thai dish from Montavilla's Yaowarat. A comforting bowl of wide rice noodles served with chicken cooked in pork fat and chiles, topped with a steamed egg.

• Shaughnessy's would add an extra side of sour and spicy chili sauce.

🍨 Dessert: A hot fudge sundae with "good" vanilla ice cream, nuts and salty-style whipped cream.

🍸 Nightcap: A vermouth and soda from SE Portland's Kabinett.
