Last Meal: Baon Kainan's Geri and Ethan Leung

The husband-wife duo behind award-winning, Filipino food cart Baon Kainan are finally feeling settled in their new pod at Alberta Carts — dishing out weekly specials and partnering with other local chefs.

What they're saying: Finding consistency has been difficult, Ethan Leung told Axios, "especially when food carts rely on the weather to get people out."

  • Collabs helped them drum up business during the winter, but the specials aren't slowing down this summer: "Still under wraps so stay tuned for those!" Geri Leung said.

We wanted to know: If they had one last meal, what would it be?

🐙 Appetizer: At BBQ restaurant Chochu Local, Geri would order the citrus octopus kelaguen served cold with onions and spicy chili peppers.

  • Ethan starts with Magna Kusina's isaw skewers — "I don't think I've ever had pork intestine the way they prepare it," he said.

🍳 Entree: Magna Kusina is on Geri's list, too: "Magna's crab fat noodle is a comforting bowl of homemade squid ink noodles, crab and a luscious seafood sauce that makes you scrape the bowl when you're done," she told Axios.

  • Chicago's Au Cheval is home to Ethan's main course, a foie gras served over soft scrambled eggs with toast.

🍨 Dessert: Luce's buttermilk panna cotta with a pine bud syrup is Ethan's choice for a simple sweet treat, while Geri reaches for a scoop of hazelnut from Pinolo Gelato.

🥥 To wash it all down: Finishing their last meal, Geri would grab a roasted oolong milk tea with cream cheese cold foam from RoyalTea, and Ethan's pick requires a trip to the Philippines for a buko milkshake.
