$30 sandwiches arrive in Richmond

Sabrina here. I recently checked out Chimbo Sandwich Shoppe, which opened last month the old 8 ½ spot in Church Hill.

Why it matters: I know that "Chimbo" is a nod to Chimborazo, but I'm laughing because it also means "cheap" in Spanish — and my sandwich was $18 with tax.

Don't get me wrong. I loved it. I got the small version of the Fig & The Pig with prosciutto, bacon, fig jam and a honey gorgonzola spread on sourdough bread.

Yes, but: It's one of the cheaper menu options.

"The Sheep," made with marinated and sliced flank steak, is $38 if you get the large.
A chicken caesar sandwich is $30.
A classic Italian is $28.

The intrigue: Chimbo dropped some of its prices after people commented on them when the shop first posted its menu to Instagram.

The result: Goodbye, $36 brisket sandwich.

Pro tip: If you get a large, split it with someone and enjoy it at Libby Hill.
