Japan has long had a love affair with Italian food, but finding Itameshi — a fusion of the two countries' culinary traditions — is hard in the Triangle.
Long before he opened Dino's in Durham, chef Tom Cuomo tried the combination at Papa Shogun in Raleigh, but the restaurant closed during the pandemic's first year.
Zoom in: Shinmai Kumo, which opened last fall in Cary, is filling the void left behind, serving a wide variety of noodle dishes and flatbreads.
On the menu, you can find: Sukiyaki linguine, featuring sliced beef and soy sauce; a spaghetti topped with roe; and flatbreads featuring Japanese-style chicken curry or even unagi.
We tried the lunch specials of Tonkatsu Tagliatelle, which places a red sauce over Japanese-style fried pork and pasta ($18), and some wasabi fries ($8).
