Carrboro bakery Even Dough opens soon as a café

Even Dough — the Carrboro bakery beloved for its custom cakes, challah, pies and other baked goods — opens as a café on Tuesday, Sept. 2, on Weaver Street.
Why it matters: The opening marks the latest chapter for Even Dough, which owner Meital Cohen, a former New York pastry chef, started as a home bakery during the pandemic.
- For years, the bakery has operated via online ordering, workshops and occasional bake sales. About a year and a half ago, Cohen moved the business into its spot in downtown Carrboro, though it wasn't open for regular walk-in business back then.
Dig in: Once the cafe opens, expect both sweet and savory pastries, like tarts, cookies, cakes, bagel sticks, bourekas and puff pastries. Cohen will source coffee from Grey Squirrel.
- The business will focus on three areas: the cafe operations, baking workshops and online ordering/catering for small and large gatherings.
What they're saying: "I noticed we have great bakeries and great coffee shops here but somehow the combination of both doesn't really exist here," Cohen tells Axios.
Flashback: In New York, Cohen ran the bakery department for a restaurant chain called Westville, baking fresh desserts for all of the group's locations.
- Like many other New Yorkers living with multiple children in an apartment, Cohen came to North Carolina seeking a lifestyle change and more space during the pandemic.
- Then, she started baking from her home kitchen. "I really wanted to do what I love the most. One of them is to host people and bring people together; that is my passion."
Stop by: Find Even Dough at 203 W. Weaver St. It'll be open 8am-4pm Monday through Friday, then 9am-3pm Saturday and Sunday.
