Winemaker and rocker Maynard James Keenan bringing sushi restaurant to Cottonwood

• The restaurant will feature sustainably sourced seafood and vegetables grown in Merkin's greenhouses and farms across northern Arizona, with a menu created by chef Brett Vibber, Queen B Vinyl Cafe's culinary director, who's worked at Roka Akor locations in London, Hong Kong and the U.S.
• Vibber is joined by chefs Chuhiro “Thomas” Kato and Sheridan “Sher” Chase.
• The sushi restaurant will seat 44, with two private dining areas, and, of course, will serve Queen B wines and Arizona Sake.

What they're saying: "When Jen and I were deciding on the Brunch and Ramen menu for the Queen B Vinyl Cafe, we dismissed the idea of also doing a sushi concept because we assumed it would be impossible to find a legitimate sushi chef in Cottonwood," Maynard James Keenan said in a press release. "Turns out he was standing right next to us."

• He said Vibber's "vision for food and wine in Arizona seamlessly aligns with ours."
