Still & Barrel will serve high-end whiskey and wine in central Phoenix

• Plans began several years ago under previous owner Sheldon Knapp, who is still a partner in the restaurant, and work began in earnest this January.
• It'll be open to the public by mid-January 2026, likely Thursday-Saturday at first, and available for private events other days.

Zoom in: Phoenix City Grille is already well known to local whiskey enthusiasts for its expansive behind-the-bar selection, but Still & Barrel will be a step up, owner Dennis Shaw tells Axios.

• The restaurant has acquired rare whiskies for the new venture and spent the past few years stockpiling special bottles.
• Still & Barrel's more noteworthy offerings will include a Double Eagle Very Rare — very few bottles come into Arizona, Shaw says — the Last Drop, Pappy Van Winkle, bottles from the Buffalo Trace Antique Collection, and rare offerings from labels like Old Forester, Michter's and Willett.
• The wine selection won't be as exhaustive, but Shaw says they'll have 30 or so "really substantial" American and French wines.

Between the lines: Still & Barrel will be more reserved and exclusive than Phoenix City Grille — "more of a high-end, cozy place" for a drink before dinner or a show, Shaw says.

• It'll have 14 seats at the bar and 16 more seats at four high-tops, with an electric fireplace and three televisions. Food will be available from Phoenix City Grille.
• "I don't think there's anything like it in the neighborhood," Shaw says.
• There will also be a bottle shop where you can get whiskies and wines to take home, a larger version of Phoenix City Grille's small shop, which it will replace.
