We're back in the Valley after a lovely trip to Minneapolis last week to convene with our Axios Local colleagues. We had a fabulous time but did encounter one culinary faux pas we couldn't help but share.
The big picture: When we saw we'd be visiting a taco truck for dinner, we were skeptical. After all, Minnesota Gov. (and vice presidential nominee) Tim Walz recently visited a Phoenix taco shop and was jokingly mocked for thinking black pepper was too spicy.
It turns out, our suspicions were founded.
Zoom in: We sampled chicken, beef and fish tacos and found them all pretty blah.
A few thoughts:
Shredded cheddar cheese topping? Oh no.
We know the Midwest loves to deep fry, but a fish taco should have more fish than breading.
The tomato-to-pepper ratio in pico de gallo should be more than 100:1.

The other side: Jessica did come across a damn good taco later in the trip at a popular Indigenous restaurant called Owamni.
The bison birria taco leaned into the ancestral ingredients of the area with pesto and Wojapi, a Native American berry sauce.
