Dusty Diamond is a cowboy-themed pop-up now taking over High Praise downtown, just in time to lean all the way into rodeo season.
The latest: The InterContinental hotel bar has been transformed into a swanky saloon, trading its usual look for cowhide accents, rustic glam touches and a special cocktail menu.
- The pop-up runs through March 1.
The vibe: It's perfect for rallying your group before heading out to the rodeo or keeping the party going afterward.
- Plus, there's a mechanical bull to test your rodeo skills (or at least get a video for Instagram).
- You'll also find plenty of photo-ops to show off your rodeo fit, from backdrops to drinks that double as props.
What to try: Speaking of drinks begging for a photo, Truck on Fire ($16) is ideal for sweet drink lovers. This prickly pear whiskey cocktail is fruity, vibrant and dangerously easy to sip.
- It's served in a boot-shaped cup with cowboy disco-themed garnishes.
- The smoked brisket queso ($14) is a hearty, shareable snack layered with meat that tastes like it just came off the pit. It's satisfying but not a belt-buster, so you'll still be hungry for rodeo eats later.
