👋 Hey, it's Madalyn! I recently revisited an old favorite — Uni'Ko Japanese Lounge.
The latest: Uni'Ko has been around since 2016, but since my last visit, the restaurant has expanded into a neighboring suite in the space surrounding the Eilan Hotel and Spa.
Its new home features a refreshed design and a speakeasy that comes alive at night.
Dig in: I didn't make it into the speakeasy this time, but I rediscovered the fresh, vibrant flavors that make Uni'Ko's sushi worth the drive to The Rim area for a downtowner like me.
What to try: The tono roll ($20). It has spicy tuna and cucumber topped with avocado and tuna. It might sound simple, but it's a perfectly balanced mix of heat, texture and freshness.
