Houston bakery let diners name their price

• A purveyor of beautifully constructed pan dulces and pastries, Preemo's is run by baker Mario Figueroa.
• Cakes for order include a citrus masa harina olive oil cake, with a yuzu curd and mascarpone mousse.

State of play: The Paga Lo Que Puedas / Pay What You Can campaign comes from Norma Listman and Saqib Keval, the duo behind acclaimed Mexico City restaurant Masala y Maíz.

• This year, more than 100 restaurants across 13 countries are taking part, from Houston to Istanbul.

How it works: Instead of a check, diners get a blank envelope and decide what they can pay for their meal. Drinks are priced as usual.

• Everything else stays the same: Restaurants serve their regular food with their regular hospitality, whether a diner leaves $5 or $500.

What they're saying: "Preemo's pan dulces and pastries is our way of bringing people together," the bakery said in a statement explaining why it's participating. "Community, tradition, and quality is very significant as we pop up around the Houston area."

If you go: Preemo's operates out of a variety of venues. Tomorrow you can find them at Las Perras Café, on Harrisburg Boulevard by Sampson Street, from 11am till they sell out.
