If you're not eating low-key absurd food you can only find at the rodeo, what are you doing?
Why it matters: The rodeo is bringing back its staples, but there are also new food options to try. We gave some of them a shot.
Richies Cheese Curd Tacos
This new vendor serves up four different fried tacos, where the pull is the stretchy goodness curd.
Quick review: The pickle tacos (2 for $14) are a perfect fit for the rodeo — honestly, interesting pickle treats should be a carnival staple. With the raspberry sauce (which we recommend), it hits the right mix of sweet, sour, crunchy and gooey.
✅ Checked: Deep fried snack.
MiaBellas Wood Fired Pizza
New on their menu this year: Elotes Mexican Street Corn Pizza ($25). A shareable, filling meal if you're hungry.
Quick review: The Tajín hits perfectly, the corn works, and eating elote on pizza makes more sense than you'd expect.
- The flavors are balanced, making this an oddly successful Tex-Mex-Italian fusion.
The intrigue: We got a good laugh from the food truck's sign: "Bringing the Italian back to pizza."
✅ Checked: Weird concoction.
Drizzle Cheesecakes
Of course, you'll need a dessert to round off your experience. This new vendor serves cheesecakes ($15) — on a stick, naturally — dipped in toppings like Oreo, caramel, red velvet and more.
Quick review: Exactly as advertised, and it delivers. Sturdy on the stick with a thick, satisfying coating. Rich, indulgent and downright scrumptious.
