Dobre Tasting Room, a new restaurant opening soon in the East Village, will feature what collaborator David Hayden says is Des Moines' first fully handcrafted seltzer bar.
- It'll also serve up locally grown food, much of it prepared sous vide-style.
The menu will constantly change, but here are some expected highlights:
- The drinks: Iowa-grown fruits will be freeze-dried in a process to extract flavor for the handmade seltzers. One will use a lemon zest technique popularized by Benjamin Franklin.
- The food: Nothing pretentious but lots of eclectic items you won't find at other places. Think homemade cheese, mochi Japanese rice cakes and a Georgian cheese bread known as khachapuri.
Location: 503 E. Locust St. That's right, it's where Jett and Monkey's used to be before recently moving to a larger location.
- It will seat up to 44 people.
Hours of operation will be announced in coming weeks, according to owners Loyd Ogle and Brad Simms.
- Expect a July open date.
