After years of building a cult following through farmers markets, a Food Network win and a veggie hot dog concept, The Easy Vegan team is opening its first brick-and-mortar restaurant in Denver this weekend.
Dig in: Chef Alexi Mandolini and her partner Taylor Herbert are launching Mother Other, a vegan bar and restaurant in Baker.
- The restaurant reimagines nostalgic comfort food through a plant-based lens. Expect fan favorites like The Easy Vegan's pierogies alongside new dishes including deep-fried risotto, spring pea and leek dumplings, and rigatoni alla vodka.
- Herbert's beverage program will feature creative cocktails and house-carbonated vegetable sodas.
Between the lines: Mandolini says the couple designed Mother Other as an inclusive neighborhood gathering place — a "third place" for queer communities, chosen families and anyone looking to pull up a chair.
The intrigue: The pair also built much of the restaurant themselves, tackling plumbing to light construction with help from friends and family.
😋 My thought bubble: I'm not a vegan, but these two make some of my favorite food in Denver. I'm excited to see what they do with a permanent home.
