The Easy Vegan is venturing into veggie dogs

• The team plans on hard-launching as early as spring, complete with a fixed hot dog cart and other pop-ups around town, they announced on social media at the end of November.

Why it matters: Although you can find meat-free hot dogs across the city, few spots specialize in them.

What they're saying: Herbert and Mandolini "wanted to focus on one or two things and focus on doing them well," the couple said in a statement.

😋 My thought bubble: I was lucky enough to try the loaded potato dog, with crispy fried potatoes, creamy Sriracha aioli and garlicky sour cream before they sold out on Sunday. As a pescatarian, it can be hard to find a good, veggie-friendly dog — but this checked all the boxes for me.

• My husband, a Chicago native, aptly opted for the Chicago dog, complete with yellow mustard, sport peppers, celery salt and a poppy seed bun. He said it tasted like home — aside from the bun, which wasn't steamed in traditional fashion.
