Dilworth's new wine bar Emmy Lou's will open soon

New Dilworth wine bar and bottle shop Emmy Lou's will open on Friday, Dec. 19.
Why it matters: Owners Andres Kaifer and Alex Bridges teased the project earlier this year, but now we have an opening date, a chef and a first look at the menu and vibe.
What to expect: A robust by-the-glass program with 20+ wines from both classic regions and emerging producers.
- The bar will also pour local beers and stock canned and bottled NA options.
- "We set out to create a space that removes the pressure and makes wine feel approachable and fun," Bridges said in a statement.
Dig in: Emmy Lou's will serve lunch, dinner and dessert, with menus expected to evolve seasonally alongside the wine list.
- Its menu will feature shareables like meat and cheese boards, carpaccio, shrimp cocktail and baked brie, by chef de cuisine Adriana "Dre" Cavazos, the pastry chef at Customshop.
- Lunch dishes include pastas, salads and sandwiches, like the "Elena Ruz," made with roasted turkey, fig jam and cream cheese on a baguette, and the "Mortadella sandwich," made with mortadella, idiazabal, arugula, pepperonata and EVOO aioli on verdant sourdough.
What they're saying: Kaifer calls Cavazos a key part of the team's growth and says he trusts her to "leave a unique and fresh mark on the city's food scene."
Zoom in: Kaifer and Bridges also own Customshop in Elizabeth, which got a nod this year from Michelin.
- Their Spanish-style food stall, Marina's Tapas, recently closed after less than a year at Optimist Hall and was replaced by Comal Tacos, a Southwest-inspired taco stall with a menu designed by Kaifer.
- Some of Marina's dishes will eventually come to Emmy Lou's, like the pan con tomate in the summer and pinchos.
- "The goal is to get this at least a Bib [Gourmand]," Kaifer said.
