Starbucks rolls out broad menu reset as it pivots to growth

Starbucks is rolling out what appears to be one of its most wide-ranging menu updates in years — including its biggest bakery refresh ever, a core coffee addition and permanent drink launches.
Why it matters: Monday's launch comes as the Seattle-based coffee giant pivots from simplification to growth nearly a year and a half into its turnaround plan under CEO Brian Niccol.
- The company is now "playing offense and innovating," Niccol said last month.
The big picture: Starbucks menu updates are often incremental. This one stands out for its breadth, touching multiple core categories — food, brewed coffee and drinks — at the same time.
- Executives say the goal is to add innovation without undoing recent operational gains.
Flashback: Over the past year, Starbucks streamlined its menu and operations as part of its "Back to Starbucks" plan, cutting roughly a quarter of its SKUs and focusing on speed, consistency and execution.
- Company leaders have said those changes are beginning to show results, clearing the way for a broader return to menu innovation.
State of play: Food now accounts for about a quarter of Starbucks' U.S. sales, underscoring why the company has built a "disciplined innovation pipeline" spanning coffee, espresso, matcha, chai, Refreshers and food, said Tressie Lieberman, the company's global chief brand officer.
- Lieberman has said Starbucks will continue leaning into all-day snacking.
Starbucks menu changes 2026
Zoom in: Beginning Monday, Starbucks U.S. stores introduce:
- Six new bakery items, including globally inspired pastries like a yuzu-filled croissant, Dubai chocolate bite, a pistachio chocolate loaf, a cookie-croissant swirl, berry blondie and strawberry matcha loaf.
- A new everyday brewed coffee, Starbucks 1971 Roast, a bold dark roast inspired by the brand's Pike Place roots.
- New permanent matcha drinks, including Iced Double Berry Matcha and Iced Banana Bread Matcha, alongside limited-time Valentine's Day offerings that launched last week.

What's next: Starbucks has previewed additional menu changes coming this spring, including customizable chai, toasted coconut drinks, the return of lavender flavors and new Energy Refreshers.
Free Starbucks coffee Super Bowl Monday
The intrigue: Starbucks is pairing the menu launch with a one-day promotion the day after the Super Bowl: Starbucks Rewards members can get a free tall brewed hot or iced coffee with the purchase of any beverage Feb. 9.
- The Starbucks Monday deal also serves as a preview of Starbucks' broader loyalty push.
- The company is set to roll out a revamped Starbucks Rewards program in March, adding new tiers and perks designed to drive engagement and repeat visits.
Zoom out: Last year's Starbucks Monday offer drove record-breaking customer engagement and delivered the company's second-highest Monday gross sales day ever, Niccol said on an April 2025 earnings call.
