A new Japanese-style cheesesteak pop-up opens in D.C.

State of play: Kat's King of Suteki will pop up every Monday at Chinatown's Tonari, starting Feb. 10 at 5pm — slinging Tokyo-style Philly cheesesteaks, Sapporo-steamed hot dogs, nori fries and cold beers.

Zoom in: The "Chīzu-Sutēk" stars dashi-simmered beef and onions tucked into a local Lyon Bakery roll, topped with Kewpie mayo, Japanese pickles and sichimi chili spice.

• Diners can pick melty cheeses (or whiz), add on crispy shishitos or buttery onions, and go all-out at a "fixins" bar filled with peppers and relishes.
• We'll never say no to a side of au jus dunking sauce.

The intrigue: Traditionalists' heads may be spinning but this cheesesteak already won a chomp of approval from the owner of Philly's legendary Pat's King of Steaks at a fundraiser last year. Fukushima says his encouragement brought the pop-up to life.
