Kelly Whitaker brings SHEEP pop-up to Cherry Creek

Chef Kelly Whitaker — the creative force behind Denver's two Michelin-starred Wolf's Tailor — will debut a Cherry Creek pop-up next month called SHEEP.

Dig in: The three-month residency, tucked inside the Clayton Hotel & Members Club, will incorporate local ingredients, fermentation, open-fire cooking and the restaurant group's zero-waste ethos — hallmarks of Whitaker's style at his Sunnyside eatery.

What to expect: The temporary operation will serve a four-course tasting menu, organized around smoke, ember and flame, with a rotating "ash" dessert course courtesy of The Wolf's Tailor executive pastry chef Emily Thompson.

Dishes include heirloom tomatoes, mackerel, corn juk, Colorado melon sorbet and Thai basil jelly.

Whitaker collaborated with chef Taylor Stark on the project. The menu starts at $95.

What he's saying: Whitaker told Westword he wanted an "abbreviated experience at a lower price point" and to "bring the idea of Wolf's to a broader audience."

If you go: SHEEP runs July 8-Oct. 4 at 233 Clayton St. Dinner starts at 5pm daily, with lunch served noon-2pm Saturday and Sunday.
