Sharigato, a hand-roll sushi restaurant, will open in The Joinery at Optimist Park this spring.

Why it matters: This isn't your typical sushi spot. Instead of loaded specialty rolls or all-you-can-eat buffet spreads, Sharigato centers on a small menu of made-to-order hand rolls, prepared one at a time at a counter where guests can watch each step.

Catch up quick: The restaurant built a following through pop-ups over the past year and is now in the final stages of opening its permanent spot at The Joinery, an apartment community on North Brevard Street in Optimist Park.

What to expect: You'll be greeted by a hand-washing station upon walking in (fair — you're eating with your hands here). 

The main draw is the restaurant's 24-seat counter, where guests can watch each roll prepared in front of them.

The rolls, the team tells us, are meant to be eaten immediately, while the seaweed is still crispy and the rice is warm.

If you go: Seating is first-come, first-served, with some standing room, too.

There's also a separate takeout window dubbed "Shariboto," where a sushi robot will help make maki-style rolls designed to travel better.

Best bites: Hand rolls range from blue crab and toro to scallops and salmon, plus veggie options like roasted eggplant and mushrooms.

There are also snacks, like blistered shishitos and tempura ube fries with Japanese curry aioli.

Sip on this: Drinks include green tea, sake, beer and a small cocktail list, including a sakura spritz with rosewater and lychee.

The vibe: Simple, fast and interactive. As chef-owner Shari Lynne Robins puts it, it's that mix of crunchy nori, warm rice and fresh fish that "just makes you keep craving it."

Between the lines: Sharigato is inspired by Los Angeles- and NYC-based KazuNori, which serves hand rolls one at a time.

It's the kind of place Robins says she missed and wanted to bring to Charlotte.

Flashback: A New York native, Robins moved to Charlotte from L.A. about eight years ago. She previously worked as a senior director of culinary innovation, developing products for brands like Trader Joe's, Whole Foods and Costco.

Zoom out: Sharigato joins a growing lineup at The Joinery, alongside local spots like BK Pilates and Nightswim Coffee, and more on the way.

It's one of those weekends in Charlotte where you're never more than a few steps from your next move.

Things to Do

I rode in a car with no driver in Austin twice. And by the second trip, it already felt normal.

Why it matters: Waymo is already street-mapping the city with human drivers. Once testing is complete, the company's driverless fleet will roll out in phases. 

Zoom out: Right now, Waymo operates in cities like Austin, Phoenix, San Francisco and Los Angeles, with more on the way.

Waymo reps told Axios there's no timeline yet for when fully autonomous rides will launch in Charlotte.

Here's what I learned from my recent ride. 

No driver = a more predictable experience 

With no one behind the wheel, it removes many of the downsides of human rideshares, from safety concerns to getting stuck in small talk you didn't start.

You can enjoy the ride in silence or put on music (you can choose from a selection of playlists and, bonus, no one's there to judge your taste).

My first Waymo picked me up on a busy street in downtown Austin. It parallel-parked perfectly and greeted me when I entered.   

During your ride, you can keep track of your route and arrival time on a screen while the steering wheel turns on its own. 

At first, I was hyper aware that no one was driving. But once I noticed how cautious these robotaxis drive, that feeling faded pretty quickly.

You may be alone, but you're not unchecked

The car is constantly monitoring what's happening, including you.

At one point, I took my seatbelt off as we were pulling up to my stop. The car stopped and an automated voice warned it would connect me to a live support person if I didn't buckle back up...I buckled for the extra five seconds.

It also reminds you to grab your belongings and can detect if something is left behind. There's a live support option built in, too.

It drives really cautiously, at least for now

The ride is smooth, but these cars definitely play it safe. Mine drove like an overly cautious teenager taking their license test, following every little rule and adhering to the speed limit, if not a little under. 

There's no distracted driving, no checking a phone, no missed turn signals. 

The technology also detects pedestrians, triggering a couple of abrupt stops during my ride. 

Yes, but: Waymo acknowledges there are flaws in the car's submissive functionality, sometimes causing major disruptions. The Wall Street Journal reported that the company is now working to change this by making them more "confidently assertive."

The intrigue: Waymo also typically avoids highways, though it has started rolling out autonomous freeway rides in some cities. If that ever comes to Charlotte, it'll need that extra assertiveness for places like exit 3A.

My thought bubble: At first, it feels like you're in a sci-fi movie. Then it just feels like a ride. And when it finally launches in Charlotte, I won't hesitate to get in again.

The vibe: Another one of Uptown's popular rooftop bars, you can't go wrong taking out-of-towners here, whether you're day drinking or looking for an upscale dinner out.

Stop by: 222 S. Caldwell St., on the 21st floor of the Skye building in Uptown.

The vibe: Pronounced "new-va-lay." Expect a sophisticated, airy, indoor-outdoor bar in Uptown, with a large menu of specialty cocktails and snacks like ahi tuna tacos and sliders.

Stop by: 220 East Trade St., on the 22nd floor of the AC Hotel in Uptown.

Reservations are accepted for groups of 15 or more.

The vibe: A photo-worthy rooftop decked out with flowers in the same building as Saku Yakitori and Sushi Bar in Uptown's 5th Street District.

Stop by: 123 East 5th St., in the Binaco Tower.

The vibe: Sip a craft cocktail and take in skyline views at this nighttime hangout atop the Le Méridien Charlotte hotel, where Cloud Bar used to be.

Open Tuesday-Thursday, 5pm-midnight, and Friday-Saturday, 5pm-1am.

The vibe: Inspired by a Japanese izakaya (a casual bar where people go to drink and share small plates after work), Uchibā is the rooftop above its sister restaurant, Uchi.

It's focused on craft cocktails, Japanese whisky and shareable plates.

Stop by: 1720 Commonwealth Ave., in the Commonwealth development in Plaza Midwood.

It's inspired by a vintage clothing store that previously occupied the space and features a full bar, kitchen and rooftop deck.

The vibe: An everyday spot atop the AC Marriott Hotel in SouthPark, offering cocktails and a Spanish-inspired menu of small plates.

Stop by: 416 E. 36th St., right off 36th Street Station.
