Charlotte bakery joins "Pay What You Can" initiative

Catch up quick: Michelin-starred Mexico City restaurant Masala y Maíz started the initiative last year, when more than 20 Mexico City restaurants opened their doors without making money a barrier to dining.

• This year, the effort has expanded to restaurants across 14 countries.

How it works: Instead of paying a set price, customers can choose what they want and pay whatever they can.

• Dulce Dreams, a pop-up bakery known for its Mexican pastries and conchas, will set up at La Bodeguita at Camp North End for the event. The menu will feature several concha flavors, including Biscoff, cookies and cream and Gansito concha sandwiches.

What they're saying: Dulce Dreams owner Norma Zuniga says she's wanted to try something like this since starting the business.

• "This is not charity. This is hospitality," Zuniga said of the initiative, which she says is about welcoming people with "dignity, generosity and trust."
