Chef Mawa McQueen is doubling down on Boulder, with a second Crepe Therapy Cafe set to open this summer inside the Limelight Hotel on University Hill.
Why it matters: Landing — and keeping — renowned chefs like McQueen strengthens Boulder's growing reputation as a serious food destination.
Driving the news: The cafe is expected to open in early June on Limelight's ground floor.
Context: McQueen opened her first Front Range spot in Boulder Junction last year.
- Crepe Therapy's other two locations are in Aspen and Snowmass.
Behind the scenes: After the Boulder Junction cafe was "welcomed with open arms," McQueen said she got excited to open another place closer to the University of Colorado campus.
- "We're not done here yet," McQueen tells Axios. "There's still so many lives to touch, and so many connections to be made."
The vibe: Don't expect a grab-and-go crepe shop. McQueen says the new cafe is designed for lingering.
- With its cozy indoor seating and outdoor patio, she envisions the new location to be a gathering spot, especially for students on the Hill.

Between the lines: The Limelight, built in partnership with CU Boulder, is trying to position itself not just as a hotel, but as a destination for students and residents.
- It recently hosted multiple Conference on World Affairs panels, and with a Crepe Therapy joining it's Ajax location, the hotel is hoping to draw in people with food and drink.
- "Chef Mawa McQueen's wellness-driven approach aligns perfectly with Boulder's values and the restorative and energizing guest experience we're cultivating here at the Limelight," general manager Joseph Steiskal said in a statement.
