Bill's Oyster co-owner has expanded his Austin footprint with the debut of Southwestern restaurant and bar Teddy's, which opened in the Rosedale neighborhood last month.
Catch up quick: Daniel Berg moved from New York City to Austin in 2017 and opened seafood restaurant Bill's Oyster Bar in 2023 with co-owner Dylan Salisbury.
- Teddy's, their new venture, is named after Berg's second son, and took over the former location of Spread & Co., which closed in May before relocating to Cherrywood this fall.
What they're saying: "As a non-native Texan, I really wanted to pay homage to the cuisine of Texas, which is very unique, and all of the cultures it encompasses including Czech, German and Mexican," he told Axios. "Two, I think Southwestern cuisine is very underrepresented in Austin and saw a niche that Teddy's could hopefully fill."
What are you most excited about on Teddy's menu?
"I'm probably most excited about our Texas chili on the menu. We braise beef cheek and brisket with our own homemade chili purée and dried ground chiles. You can also add roasted bone marrow to our Texas chili giving it a really delicious savory, full-bodied flavor. Chili is something a lot of Texans make at home and take pride in and I'm proud to offer our take on the classic dish at Teddy's."
Now to the important stuff: You're marooned on a desert island. If you could have one dish, what would it be?
"The 50-day dry-aged tomahawk ribeye for two at Red Ash. Best steak in town."
What's for dessert?
"My favorite dessert of all time is the tiramisu from Cafe Spaghetti in Carrol Gardens Brooklyn. I'm also partial to the cheesecake we have on the menu at Bill's Oyster."

"Chick-fil-A's Arnold Palmer is one of my go-to's. I also love the Frozen Cowboy Carajillo we have on the menu at Teddy's."
