Axios Boulder

May 15, 2026
🥐 Dear reader, we have sacrificed an entire Friday to discuss breakfast sandwiches.
Specifically, the four great vessels of breakfast: the bagel, the biscuit, the English muffin and the croissant.
Hopefully, these cards settle any ongoing debate.
Sincerely yours,
- The Breakfast Club

🌦️ Today's weather: Clear skies and highs in the 80s. Highs in the 70s with a chance of showers over the weekend.
Today's newsletter is 964 words — a 3.5-minute read.
1 big thing: Boulder's bagel scene gets busy
Two new bagel shops are moving to town, adding fresh competition to the city's already crowded breakfast sandwich scene.
The big picture: Boulder residents can spread their breakfast love across a variety of local and chain spots.
Driving the news: Nederland's Decent Bagel will expand with a second location in east Boulder that's under construction at the Weathervane apartment complex near 55th and Arapahoe.
- Co-owner Audrey Fritschel told us they hope to be open by the end of June.
- Decent Bagel takes inspiration from the traditional New York City shop, with a few breakfast options alongside standard lox offerings. They also offer focaccia sandwiches.
Fritschel's optimistic her company isn't done adding locations, saying: "We're excited to be building this Boulder location to support our growth across the Front Range over the next couple of years."
Zoom out: Call Your Mother, a Washington, D.C.-based bagel business, has expanded aggressively throughout Colorado since 2023, and opened its first Boulder location last fall on the Twenty Ninth Street Mall.
- Call Your Mother describes itself as a "Jew-ish" fast-casual spot serving New York–Montreal-style bagels.
- It offers a wide variety of fillings, including plenty of vegetarian options to suit Boulderites' tastes.
Reality check: Both locations will have stiff competition in Boulder.
- Call Your Mother in particular sits in a bagel-rich environment, with Einstein Bros. Bagels, Woodgrain Bagels and Moe's Broadway Bagel all within a 1-mile radius.
- Meanwhile, Fleishman's Bagels and Delicatessen food truck is parked in east Boulder, while Big Daddy's Bagels and a second Einstein Bros. are on Baseline Road.
2. Biscuit Mike's gets flaky in Longmont
For all this talk about bagels, my personal favorite breakfast bread is the biscuit, and folks like me will be excited to learn that a popular northern Colorado food truck recently opened a Longmont storefront.
The big picture: Popular food trucks across Colorado are increasingly turning pandemic-era followings into brick-and-mortar operations, as loyal customers seek more reliable hours and expanded menus.
Driving the news: Biscuit Mike's, launched as a Longmont food truck in 2020, opened a location at 900 Coffman St. in March.
Dig in: As you'd expect from a food truck turned restaurant, the menu is simple and focuses on what Biscuit Mike's does best. (That would be biscuits ... in case that wasn't clear.)
- The restaurant has your basic meat, egg and cheese breakfast combo, which you can also order as a melt.
- Ask for the sandwiches on their signature buttermilk biscuits ($8-$9) or the daily special.
Yes, but: If you slept in, there are lunch options, as well, including chicken, pulled pork and portobello mushroom.
💭 My thought bubble: The biscuits are nice and flaky, and pair well with fresh off the grill fillings.
- For lunch, I particularly enjoyed the "Heather" ($14), a chicken, ham and jam concoction.
If you go: After initially operating on a limited schedule, Biscuit Mike's is now open seven days a week.
- 6:30am-1:30pm Monday-Friday
- 7:30am-1:30pm Saturday and Sunday
3. 🥞 Boulder breakfast BINGO

They say that breakfast is the most important meal of the day, and it's a big deal in Boulder.
The big picture: The selection ranges from longtime staples like The Village and The Buff to trendy spots like Snooze and Tangerine, along with quick and easy sandwich and burrito vendors like Moe's and Deli Zone.
So we've created a breakfast BINGO card so you can eat your way around town.
- Caveat: For space reasons, we excluded coffee shops with food menus and restaurants that serve lunch and dinner unless they are especially known for their breakfast offerings.
- Also, RIP to Egg and I, Le Peep and Denny's.
- My thought bubble: As a big eggs Benedict fan, Foolish Craigs is my go-to.
👂 We want to hear from you: What are your favorites, and what spots did we miss?

5. 📸 Flashback Friday: A presidential breakfast
Boulder's breakfast scene is so legendary that a sitting president once made a pit stop for the morning meal.
Flashback: President Obama was on a campaign visit to the University of Colorado Boulder in 2012 when he took a detour to The Buff, which at the time was at 1725 28th St.
- He asked about the restaurant's signature saddlebags, a savory pancake dish once featured on "Man vs. Food."
- He wound up ordering a skillet instead.
💭 My thought bubble: I was actually the pool reporter for this visit, and traveled with Obama during the stop.
- I forget what the clue was, but I do remember the Secret Service gave me a hint we were headed to The Buff so photographers could get in place.
🥚 Mitchell is going to just say it: McDonald's still has the best breakfast sandwiches.
