New local ice cream truck Sprinkle Joy serves Two Scoops

Alicia Gebo's ice cream truck Sprinkle Joy is popping up around Charlotte serving Two Scoops.
Why it matters: 10% of proceeds from every event supports a local community organization.
Context: Gebo, who has lived in Charlotte since she was 9 years old, spent much of her career in banking and IT. She recently left the corporate world.
Zoom in: You may have also seen her hand-poured concrete home decor at shops around town. She already has experience as a small business owner with A. Grey Design.
Flashback: In 2023, she was diagnosed with breast cancer, undergoing multiple surgeries before she was deemed cancer-free later that year. She spent a lot of time journaling and reflecting on what she wanted out of life. Ultimately, the answer was simple: she wanted more joy.
- "I found myself scribbling on the paper 'Two Scoops Mobile,'" Gebo tells me. She's close friends with the team behind the popular Charlotte ice cream brand and has dreamed of collaborating with them for years.
- Gebo began working on a business plan last year. She bought the original Pop Bar van in May. Sprinkle Joy's first event was July 23, National Sprinkle Day.
What to expect: Sprinkle Joy exclusively serves Two Scoops ice cream. The truck will have six to eight rotating flavors with a couple of non-dairy options.
- Whenever you purchase sprinkles toppings or pup cups, 100% of those sales go to the local rescue organizations Windsor Kittens and Billie's Buddies.
What's next: Sprinkle Joy will be at different pop-ups and festivals around town. You can also book the truck for neighborhood, school and corporate events, plus birthdays and weddings.
