New food truck called Snow Your Roll serves shaved ice and egg rolls

Snow Your Roll is the mother-daughter food truck venture started by Akyah “Ky” Atkinson and her mother April Atkinson. Akyah tells me that she’s always loved shaved ice and her mom has been an entrepreneur for more than two decades, so going into business with her was a no-brainer.

Why it matters: It’s the first mashup of its kind in Charlotte. Akyah says she and her mom have gotten their fair share of comments and raised eyebrows about the combination, but insists that people give it a try. “You’ll come back again whether it’s for one or the other,” Akyah tells me.

What to expect: The menu consists of eight egg roll options, plus 21 shaved ice syrups to mix-and-match and 15 pre-made combinations.

According to Akyah, the shaved ice (not to be confused with snow cones) they serve at Snow Your Roll is soft and fluffy, allowing for the syrup to stick to the ice rather than collect at the bottom of the cup.

• The short rib Philly and imperial seafood rolls are the top two must-try items. Additional egg roll flavors include the soul food roll, the truffle lobster mac roll and the lasagna roll.

• Syrup flavors include everything from peach and cherry to pink champagne and piña colada.

Akyah says, “I know it’s like a super funny combination, but it’s really working for us.”
