The newest Foxcroft location opens today in Waverly — expect wine-based cocktails and homemade pasta

The exact address is 7416 Waverly Walk Avenue, Suite H-1.

Owner Conrad Hunter, who also co-owns speakeasy Dot Dot Dot, told the Agenda that if you love the other Foxcroft locations, you can expect the same feel at Waverly.

“You’ll see our greatest hits on the menu and the culture is the same,” he said. “…The key for us is maintaining a consistent culture and level of hospitality at each location.”

The menu: You can expect some of the same offerings, but Hunter said there are also a few notable menu additions to check out, including homemade pasta, thanks to a new pasta extruder. You can choose from three different styles of pasta at the Waverly location, including rigatoni, tagliatelle, and casarecce. The pasta will be available at all Foxcroft locations, though exact types vary.

For vegetarian and vegan diners, they’ve added char-grilled eggplant flatbread, a Spanish-inspired chickpea stew, and embered carrots.

“My goal is to have a Spanish restaurant eventually,” Hunter said, explaining the addition of more Spanish flavors.

Cocktails: They’ll also have six wine-based, low ABV cocktails, created by Hunter’s Dot Dot Dot co-owner Stefan Huebner.

This includes a Blueberry Mule, a Cappelletti Spritz, and his take on a Negroni.

“We’ve seen an increased demand for low-ABV cocktails, and we’re proud to be the first in the city to create an entire cocktail menu based around wine,” Huebner said.

Layout: The new space is almost 4,000 square feet and offers seating for nearly 100 inside, plus 26 more on the patio, making it the largest of the Charlotte Foxcroft locations (you’ll also find a Foxcroft in Greenville, SC). The newest location also has two private dining rooms available for rent.

Cool equipment: One of the primary new additions to the Waverly location is a Josper, a hard-to-find charcoal grill imported from Spain.

The grill is known for locking in moisture as it cooks, leaving a flavor that’s subtle and not too smoky. The Foxcroft team spent an entire day learning from the staff at famed Spanish tapas restaurant Curate in Asheville about how to operate it.

Take a closer look and you’ll notice that Hunter and his executive chef Justin Solomon both have burns on their arms — they acknowledge there’s been a learning curve as they’ve gotten used to the intense equipment.

If you want to sample the end result of the Josper’s efforts, try the grilled octopus or the Josper-grilled chicken.

Like the other Foxcroft locations, the Waverly location has a temperature-controlled wine preservation system on-site to ensure freshness with each pour.

Hours: Foxcroft Waverly will be open from 10 a.m. to 11 p.m. Monday-Saturday and 5-10 p.m. on Sunday. The kitchen opens at 5 p.m. each day and closes 30 minutes before the bar.
