D9 Brewing plans new “The Fermenteria” concept with innovative beers and rooftop bar

Background: D9 Brewing Company was created by two engineers and a doctor, and they opened five years ago in Cornelius. At the Lake Norman location, they have 15 original draft beers that are made in-house.

The new concept: The Fermenteria “will specialize in all things fermented. From the creative fermented foods to the open-air beer fermentation rooms.”

“The Fermenteria @ NoDa will be a unique craft experience where visitors can sample a diverse range of sour, wild and open fermented beers,” one of the founders, Andrew Durstewitz, told me.

Beer: Expect tons of sours and wild-fermented brews. “Our passion for these styles inspired us to create many of the brands we have today,” Andrew said. “We’ve been honored by the Great American Beer Festival multiple times for our innovations in Experimental Mixed-Wild Fermentation and Contemporary Gose, and we’re looking forward to continuing to push those boundaries with the new capabilities we’ll have at The Fermenteria.”

Menu: They’re doing creative small plates with a fermented twist. “For example,” Andrew said, “some Kim-chi on your sliders? How about trying bread from one of our four strains of sourdough yeast? Or a yogurt parfait not made by some nameless factory in God-knows-where. The options are endless and too numerous to list here.”

Location: They’ve signed a letter of intent for a space at 954 N. Davidson St.

Design: They plan to elevate the exterior to go with the Fermenteria name, bring in two huge tanks, and create a rooftop bar with skyline views.

Targeted opening: Spring 2020. But Andrew said “many hurdles still have to be surmounted” before then.

What Andrew wants you to know: “Well, to be honest, the details about the location leaked, and we weren’t ready to really talk about it yet,” Andrew told me. “However, since it’s out there, we felt that we wanted to communicate the vision that inspired us to take the leap and begin the process of purchasing the property.

With each location we build, it’s important to us that it represent the spirit of the surrounding neighborhood. The NoDa/Optimist Park area of Charlotte has such a rich culture of creativity and passion for art. We hope that this location adds to that spirit by providing, what we believe, will be a really unique craft experience.”
