See inside Unknown Brewing’s half-million-dollar renovation, including a rooftop patio with a killer view

In addition to the recent release of the city’s first light craft beer, the 3.8% ABV Feather Light, the brewery has undergone a newly completed $500,000+ renovation that included a taproom remodel as well as the installation of a new rooftop bar with an uninterrupted view of the skyline.

“We wanted to make everyone feel as good about the space as they did the beer,” owner Brad Shell said.

The new and improved taproom saw multiple walls removed to add square footage, added white tile and more natural lighting, and doubled the number of taps.

800 feet worth of roofing was removed to create the upstairs patio and private event space, which features glass roll-up doors, plenty of standing room, a fire pit, 4 taps (Over the Edge, Pre-Game, Ginger Wheat and Feather Light) and, of course, a skyline view.

Also debuting is Passport Dough & Co., a new pizza venture in partnership with Seoul Food Meat Co.

The rotating menu, created by Seoul Food’s Mark Sung, includes everything from Thai to South American flavors served on yeast-free dough made from potatoes. While whole wheat and gluten-free options will be available, traditional dough will make its debut sometime in the future.

Still in the works is the Unknown Wood & Grain Project, a planned micro-distillery that will produce creative small batches on a 50-gallon still. Final permits are being secured.

See everything in person at this weekend’s 4.5ish Funk Fest, which will double as both the unveiling and the brewery’s anniversary party.

In addition to skyline views and live music from acts like Empire Strikes Bass and Bubonik Funk, they’ll be serving up their annual Anniversary Beer 4.5ish, a sour ale that’s been aged in oak with green figs, on Saturday from 1-10 p.m.

And, for the first time ever, the event is free.
