A high school senior is opening a s’mores food cart in Charlotte this fall

17-year-old Louisa Cacchione is planning a mid-October launch for her gourmet s’mores food cart called The Toasting Company.
The concept was born out of Cacchione’s love of business, which the high school senior plans to study when she starts college next fall. After struggling to find hands-on, immersive learning experiences that would be relevant to her future academic study and career, Cacchione decided to start her own business.
“I soon realized that in order to generate this type of firsthand understanding, I would have to become an entrepreneur myself,” she said via email. “With the inspiration from and guidance of my dad, who I have been able to watch grow his own successful company from the ground up, I had all the help and support I needed to start out.”
But why s’mores?

After visiting a local food truck rally, Cacchione and her family realized Charlotte has a severe lack of dessert trucks relative to the popularity of the mobile food trend.
That realization coupled with the family’s love of the outdoors led to kitchen experimentations with homemade marshmallows and graham crackers for a summer camping trip.
“What started out as a fun kitchen experiment suddenly turned into a pivotal moment for what would become The Toasting Company,” Cacchione said. “As we realized just how much better s’mores could be when you weren’t confined to store-bought ingredients and added creative twists to the recipe, I knew this would make the perfect product to introduce into the mobile food industry.”
After nailing down their recipes, she and her dad got to work forming the business.

The Toasting Company will open with three homemade s’mores flavors — original, cinnamon bun and salted caramel.
Each one is made with homemade marshmallows and graham crackers and toasted to ordered.
Cacchione and her dad are currently building out the cart and targeting pop-ups at mid-October festivals and events.
