Your favorite grilled cheese food truck is settling in at Sycamore Brewing for an extended stay.
Papi Queso will be taking over the kitchen at Sycamore for the next six months, starting with a kickoff party tomorrow from 5 – 10 p.m.
To celebrate, Sycamore will have $11 pitcher specials and will also be releasing BEER 200, a new pineapple IPA, paired with a special Papi Queso sandwich.
The new Hawaiian Five-0 features grilled pineapple serrano salsa, French rosemary ham, roasted tomatoes and plenty of melted fontina and mozzarella cheese on pressed Kings Hawaiian bread.

Papi Queso himself, Brian Stockholm, says Sycamore was an obvious choice as a partner for a trial run in a retail space.
“Grilled cheese and breweries make a lot of sense together,” he said, pointing out his truck’s immense success any time it rolls into Sycamore’s lot. And although Sycamore isn’t new to the food game (they’ve been running their own on-site sandwich operation since early 2015), Stockholm says their forte is beer and they’d rather spend their time on the brewery.

That clarity of focus opened the door for Stockholm to take over the kitchen and try his hand at expansion without adding a second truck to his fleet.
He says he sees this, what he calls “street vending,” as the next generation of food trucks—strategically joining forces with a mutually beneficial brick-and-mortar partner in a space that gives the trucks a retail foot print without losing their mobile vibe.
“You’ve still got the energy of the food truck walk-up experience in a cool urban setting,” he said.
Don’t worry, the Papi Queso truck isn’t going anywhere.
“We’re not shutting down the truck at all,” Stockholm said. “The truck will remain really active.” It’ll run its regular lunch service and catering operation throughout the 6-month kitchen trial.
As for the new menu at the brewery, it’ll be a fusion of Papi Queso food and Sycamore beer.
Stockholm says the grilled cheese menu will pair strategically with Sycamore beer flavors without beating the obvious “beer + cheese” idea to death.
They’ll bring in new creations, some original signature items, that killer tomato soup everybody’s been talking about and several new dipping sauces that, as Stockholm put it, allow you to “customize your grilled cheese experience.”

Stockholm says he isn’t ready to make any big announcements, but confirms that multiple permanent walk-up Papi Queso windows are definitely in his vision.

After tomorrow night’s kickoff party, Papi Queso’s Sycamore lunch service will start on Friday, November 4.
Papi Queso will be in the Sycamore kitchen Monday through Thursday from 5 p.m. – 9 p.m. and Fridays from 12 p.m. through Food Truck Friday in the evening (and yes, the Papi truck will be in the lot, too).
