I’ve never been one to get picky about honey. I’ve always grabbed the cheapest honey bear on the shelf and called it a day. But after speaking with the good folks behind Herb’s Honey, I see honey in a new light. And you should, too.
The story of Herb’s Honey
Charlotte-based Herb’s Honey, founded and run by the Caudle family, works year-round to produce local, raw honey. What started out as a one-hive experiment has evolved into a 500-hives-in-eight-counties operation over the last five years.

Perhaps most important about this faith-driven family business is their inspiration. John Herbert Caudle was diagnosed with cancer and is now a six-year survivor. While undergoing chemotherapy, he was advised by a family member to put honey on his tongue to help keep saliva glands alive. He now eats it every day.
“It’s 100 percent a gift from God that we have this business,” said Laura Caudle, one of John’s daughters.
Why you should eat (and use) this stuff
The Caudle family is passionate about all the benefits of raw honey. “We want people to know there is an alternative to medicines for treating other ailments,” said LuAnn Caudle, John’s wife. Got a fever blister? Dab some honey on it. Acne? Honey. A cut on your finger? You guessed it: honey. They even suggest mixing honey with apple cider vinegar and cinnamon for arthritis relief.

They’re especially thorough when it comes to treating allergies with honey. Herb’s Honey extracts from their hives four times a year (because of the four seasons) to allow people with allergies at any time of year continue eating honey as a remedy. What’s blooming outside naturally gets inside the hives during pollination, so they suggest you eat a spoonful of the appropriate honey daily in preparation for your allergy season (just ask; they’ll set you up with the proper type.)
LuAnn and Laura have received feedback on numerous occasions from people who no longer take allergy medicine or get allergy shots because they eat one teaspoon of raw honey per day.

Another reason to choose local, raw honey over the rest is the taste. Believe it or not, all honey does not taste the same. Flavors range from light mild in the early spring to “caramel-like” in the fall. The honey flows from February to early October, and extraction starts late fall/early winter. And since the bees travel up to 50 miles to pollinate, they’re bringing in countless blooms and flavors.
