Jing Ramen marks one year in Boulder

Driving the news: Jing Ramen opened at 1650 28th St. in April 2025, taking over the former Rakkan Ramen space.

Dig in: Obviously, ramen bowls are the main event, with a lineup of broths, meats and toppings.

• And because this is Boulder, of course, there are vegan options.
• The menu also includes sides and appetizers like pork buns, gyoza, takoyaki and crispy fried chicken.

My thought bubble: The spicy miso ramen is my go-to — flavorful enought o make me feel adventurous without fully wrecking my spice tolerance.

• And the pork buns and gyoza are both worth adding, too.
