Eleven Madison Park, restaurant with 3 Michelin stars, to go meatless

• Others in the business have done the same. Last month, Condé Nast announced that its food publication Epicurious would eliminate beef recipes due to environmental concerns.

The big picture: Humm is best known for his meat and seafood dishes, and the decision to go meatless comes after more than a yearlong closure due to the coronavirus pandemic, the Wall Street Journal reports.

• The food at Eleven Madison Park, which was awarded three Michelin stars, will now be entirely plant-based, and Humm noted in his statement that his staff is working to develop "fully plant-based milks, butters and creams."

What he's saying: "When we set out on this journey we promised ourselves that we would only do this if the meal could be as delicious as it was before," Humm told the Journal.

• "It is time to redefine luxury as an experience that serves a higher purpose and maintains a genuine connection to the community," Humm said in his statement.
