Daniel Humm, the chef at Eleven Madison Park, one of New York's lauded fine-dining institutions, announced Monday that the restaurant will go meatless upon its June reopening.

Why it matters: Humm cited environmental concerns as one of the motivating factors for the change, stating, the "current food system is simply not sustainable, in so many ways."

  • Others in the business have done the same. Last month, Condé Nast announced that its food publication Epicurious would eliminate beef recipes due to environmental concerns.

The big picture: Humm is best known for his meat and seafood dishes, and the decision to go meatless comes after more than a yearlong closure due to the coronavirus pandemic, the Wall Street Journal reports.

  • The food at Eleven Madison Park, which was awarded three Michelin stars, will now be entirely plant-based, and Humm noted in his statement that his staff is working to develop "fully plant-based milks, butters and creams."

What he's saying: "When we set out on this journey we promised ourselves that we would only do this if the meal could be as delicious as it was before," Humm told the Journal.

  • "It is time to redefine luxury as an experience that serves a higher purpose and maintains a genuine connection to the community," Humm said in his statement.

Canadian Prime Minister Justin Trudeau's Liberal government has been reelected in the national election, the CBC and CTV News projected on Monday night.

By the numbers: The Liberal Party needs to win 170 seats in the 338-seat House of Commons to form a majority government. Preliminary figures show the party ahead with 156 seats at midnight ET, with nearly 66% of polling stations reporting.

House Speaker Nancy Pelosi (D-Calif.) may need votes from an unlikely source — the Republican Party — if she hopes to pass the bipartisan infrastructure bill by next Monday, as she's promised Democratic centrists.

Why it matters: With at least 20 progressives threatening to vote against the $1.2 trillion bipartisan bill, centrist members are banking on more than 10 Republicans to approve the bill.
