Espresso tonic. Sounds weird. Tastes like summer. And apparently, no one in our morning meeting had heard of it.
Why it matters: Kansas Citians deserve a drink that actually cools you off and keeps you upright. Enter the espresso tonic; bright, bubbly and criminally underrated.

The big picture: It's exactly what it sounds like: a double shot of espresso poured over ice and tonic water, usually with a citrus twist.
The tonic's bitterness smooths out the coffee's sharp edges, and the fizz brings unexpected flavor to the surface. It's clean, refreshing and wildly drinkable.
Dig in: I've been hooked since I first tried one at Thou Mayest. Their version hits all the right notes: crisp, balanced, not too sweet, and never flat.

The good news: Any coffee spot with espresso and tonic can probably make one — just ask.
