
Today is a Cinco de Mayo Tuesday, and while we don't need an excuse to go for tacos, we take advantage when there is one.
Why it matters: Huntsville has no shortage of taco options if you're getting in the spirit today.
Case in point: I finally made it to El Cazador, stopping by their brick-and-mortar spot on South Parkway on my way home Monday rather than one of their seven other locations around town.
- I asked manager Adiel Pelayo what the best-sellers were: The No. 1 (four tacos), and the No. 53, the quesabirria, a quesadilla-birria combo.
- That's what I ordered, and they absolutely did not disappoint, which coming from El Cazador, meaning "hunter," shouldn't be a surprise.
Zoom in: El Cazador has been serving up authentic flavors — think lengua (beef tongue), cabesa (beef cheek) and tripa (beef stomach) — for more than 20 years in Huntsville, starting in 2005 with the first spot at Drake and Triana, Pelayo said.
- Taking a cue from the printed-and-plaqued Huntsville Times review on the wall, I ordered the cabesa tacos Monday. Delicious.
- The quesabirria, aside from being large enough for two people, was tender, rich and cheesy.

Catch up quick: When Axios editors are in town, they eat tacos too, including a couple weeks ago when Managing Editor Mike Szvetitz made his first trip to Taco Mama while in town for our Axios Live event.

🔥 On an earlier trip last year, Local Editor Crystal Hill got the ceviche tacos at Sea Salt downtown, which she described as "fire."
🐟 Huntsville's taco scene is always evolving, too, like in March, when Barracuda Taco Stand opened downtown, adding some fresh flavors to the mix.

The bottom line: Rocket City? More like Taco City.
