Humbert Meats has served Cincinnati since 1964, but for the Murray family, the butcher trade goes back even further.
Why it matters: As independent butcher shops become less common, Humbert remains a neighborhood fixture by emphasizing quality cuts, fair prices and old-fashioned customer service.
The backstory: Founder Jim Humbert had several stores and eventually sold them to their managers, Boone Murray says.
- Murray's father purchased the Delhi location. Today, Murray and his brother Pat carry on a family tradition stretching back to their grandfather, who was also a butcher.
- "I've been doing this for 46 years," Murray says.
The secret: Murray credits the shop's loyal following to one simple philosophy.
- "We treat everybody like a neighbor," he says.
- Many of the store's employees start as local high school students and stay through college, creating another generation of familiar faces behind the counter.
If you go: Murray says the fried chicken is a crowd favorite, but also recommends the shop's house-made burgers and specialty sausages.
